Project: ZestBio—Biobased products from food waste
Bio: Ryan Protzko is co-founder and CEO of ZestBio, where he has secured investment and research grants. Protzko is an expert in microbial metabolism of pectin-rich fruits and vegetables. Prior to founding ZestBio in 2017, he earned his B.S. in biology from Salisbury University and his Ph.D. in molecular and cell biology from UC Berkeley. His work has been published in Nature Communications and he has earned prestigious awards and funding, including an NSF Graduate Research Fellowship.
